Fresh Cheese with Honey & Figs/Mel I Mato Amb Figues

This is a traditional Catalyan dessert made with a cheese only a day or two old. This cheese that is barely a cheese is traditionally made with goat’s, sheep’s or now cow’s milk. The best examples are from Montserrat, outside of Barcelona. When purchased there, the cheese is wrapped in large green leaves to keep it’s shape and freshness.  The best substitute available is whole milk ricotta and when sprinkled with a little sugar is also a delicious popular breakfast in Catalonia.

For each serving place on a small plate:

One 1/2 inch slice or a spoonful about 1/2 cup in size of whole milk ricotta cheese

One fresh fig, stem removed, cut in quarters, flesh side up; dried figs are a good substitute

Drizzle evenly with honey

Serve at once!

Nutrition Note: This cheese is a rich source of calcium and protein and a very healthy dessert lower in fat & sugar than most!

Blueberry Buckle

A “buckle” is a coffee cake that has a top that bakes unevenly. The surface drops because of the weight of the fruit. Think of a street that buckles.

Wild blueberries were the first fruit used when this cake originated in the mid 1800s with the origination of baking soda.

This is a delicious coffee cake recipe my family has made for years. We adapted it from Bon Apetit Magazine. The recipe also makes about 27 perfect cupcakes with or without cupcake liners. Be sure to butter and flour the cupcake tins if you don’t use liners. 

The brand of spices used greatly affects the flavor. I order from Penzeys.com. My favorite cinnamon is their Ceylon Cinnamon. I also grate whole nutmeg from Penzey’s. You can always switch your spices up…..cloves, nutmeg, cinnamon, mace, ginger

Ingredients

1/2 cup butter, softened

1 1/2 cups sugar

4 eggs

3 cups flour

4 teaspoons baking powder

1 teaspoon salt

1 teaspoon nutmeg

1/2 teaspoon ground cloves

1 cup milk

4 cups blueberries

Streusel

1 cup sugar

2/3 cup flour

1 teaspoon cinnamon

1/2 cup cold butter

Directions

1. Butter the bottom and sides of a 9 x 13 inch METAL baking pan. (I use aluminum)

2. In a large bowl beat
½ cup butter, softened

3. Add 1 ½ cups sugar and beat till fluffy

4. Add 4 eggs and beat until light

5. In another large bowl whisk together:
3 cups flour
4 tsps. baking powder
1 tsp salt
1 tsp nutmeg
½  tsp cloves

6. Add 1 cup milk and
flour mixture to the butter mixture and blend till just combined.

7. Gently stir in by hand
4 cups fresh blueberries

8. Pour batter into prepared baking pan.

9. In a small bowl mix the streusel topping:
Whisk together:
1 cup sugar
2/3 cup flour
1 tsp cinnamon

10. Cut in with 2 knives: ½ cup cold butter.

11. Cut until mixture is the size of peas.

12. Sprinkle streusel over batter
Bake at 375 degrees 35- 45 minutes or until very light brown and cake pulls away from sides of the pan.

13. Cool before serving. Cut into pieces. I usually make 24 pieces.

Butternut Squash Pie

   
Above is a beautiful pumpkin and much prettier than the butternut! Below is the butternut and is a great substitute for the European pumpkin.



The above pie crusts are made from scratch. I used the recipe from Baking With Julia. And my biscotti recipe is here at Ninainthekitchen!

 But I always use butternut in my pies!

  
Pillsbury prepared crusts ready for your pie shell! Found in the dairy section.

makes 2 pies

Ingredients

  • 4 lbs. Butternut squash
  • 2 prepared pie shells, Pillsbury is my fav!
  • 1-14 oz can sweetened condensed milk
  • 3 eggs
  • 1 ½ tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 1/3 cup brown sugar
  • 1 ½ tsp vanilla

Directions

Set oven to 400 degrees F

Cut the stem off the squash and cut vertically down the middle

Place squash cut side down in a large baking dish. Add 1/2 inch water

Bake at 400 degrees about 30-40 minutes or until a fork can easily be inserted in several places in the squash

Cool and then scoop out the seeds and peel away the skin

Combine cooked squash, eggs, sweetened condensed milk, brown sugar, spices and vanilla in a large bowl and blend with a stick blender until smooth.

Pour into 2 prepared pie crusts. Bake 40-50 minutes and the crust is lightly browned and the filling still jiggles!

So delicious and nutritious my friend Lisa Williams serves this as a vegetable with dinner!
